Traditional Indonesian Dessert: MARTABAK MANIS

Martabak is a very popular sweet in Indonesia. You could say it’s like an Indonesian version of a pancake, but much more thicker and with sweet kinds of topping: chocolate, peanut crunches, sesame seeds, condensed milk and cheese. It’s a real bomb for candy lovers!

This week we bring you the recipe for a very powerful dessert. It’s one of our favorite Indonesian sweets and we’d like you to be able to savor it in your homes, too. Usually Martabak is made by street vendors, the interesting thing is that it is only sold in the afternoons/nights.

For topping, the one that we are going to make in this recipe is the regular chocolate cheese and crushed peanuts. However, don’t hesitate to get creative and add anything sweet! These days, the toppings are more “premium” to the likes of Silverqueen chocolate bars (crushed or shredded), Oreo, green tea and much more! Also, the pancake itself can be added with flavors such as blackforest/velvet cake, mochaccino or macha (green tea).

For processing, a special skillet is usually used, but you can also use a very thick frying pan to prevent the edges from burning before it is well cooked inside. Let’s get to it!

🍽️ Martabak Manis: Ingredients

➡️ For dough:

  • 1 1/2 cups coconut milk
  • 1 teaspoon dried yeast powder
  • 3/4 cup sugar
  • 2 cups plain-use flour
  • 2 beaten eggs
  • 150g granulated sugar
  • 1/4 teaspoon baking soda
  • vanilla extract
  • butter
  • olive oil

➡️ For topping:

  • salted butter at room temperature (soft and easy to spread)
  • condensed milk
  • Shredded dark chocolate
  • granulated sugar
  • chopped peanuts
  • sesame seeds
  • soft shredded cheese

👨🏼 🍳 Martabak Manis: Steps to follow for its elaboration

➡️ For dough:

• Step 1:

Heat coconut milk over medium-low heat until bubbling.

• Step 2:

Allow to cool a little and then incorporate the dried yeast. Stir well until foaming. Rest for 5 to 10 minutes.

• Step 3:

Mix the sugar and flour in a bowl. Make a hole in the center and lay the beaten eggs.

• Step 4:

Stir until smooth, then add coconut milk with foam and continue stirring. Stir in granulated sugar, baking soda and a few drops of vanilla extract. Let stand for 15 minutes.

• Step 5:

Heat an iron frying pan and grease it with a little butter and olive oil.

• Step 6:

When the oil is hot, turn down the heat and add 1/5 of the mixture. You should be able to get an omelette 2 or 3 cm thick. Wait for it to dry above and the edge to wee; remove it and arrange it on a surface without turning it over.

• Step 7:

Cut the pancake in half. Spread it with salted butter on both sides and then add the condensed milk.

• Step 8:

To make a chocolate martabak, add the same grated, some granulated sugar, crushed peanuts and sesame seeds to one of the halves.

• Step 9:

To make it cheese, add the grated cheese to the other half. Fold both halves before serving and spread some butter over and a splash of condensed milk.
