Traditional Indonesian food: LUMPIA SEMARANG

Lumpia is a type of spring rolls found in many destinations in Indonesia. This special recipe for lumpia dish comes from the city of Semarang, located in Central Java.

The city of Semarang is known for this lumpia, brought by Chinese immigrants who then resided in that area of Indonesia. Over the years, the lumpia was adapted and modified to local taste. These spring rolls are filled with bamboo shoots and shrimp, among other ingredients.

🍽️ Lumpia Semarang: Ingredients for 15 spring rolls

  • 15 spring roll wrappers/cakes

➡️ For filling

  • 2 shallots, finely chopped
  • 3 garlic cloves, finely chopped
  • 2 spring onions, finely cut
  • 250g skinless shrimp, chopped
  • 150g/5oz boiled and chopped chicken fillet
  • A 350g can of crumbled bamboo shoots
  • 1 scrambled egg
  • 1 teaspoon dried/soaked shrimp in hot water and chopped
  • 2 teaspoons sweet soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 75ml water
  • Vegetable oil to fry spring rolls

➡️ For the sauce:

  • 500ml water
  • 1 garlic cloves, crushed
  • 50g/2oz palm sugar, grated
  • 1/2 teaspoon salt
  • 1 teaspoon salted soy sauce
  • 6 teaspoons tapioca flour, dissolved in 1 tablespoon water
  • Sweet and sour sauce
  • 2 garlic cloves, finely chopped
  • 1 large red chillies, seeded, finely chopped
  • 1 teaspoon vinegar, 1 tablespoon sugar
  • 200 ml/7 liquid ounces water, 1/2 teaspoon salt
  • 1/2 teaspoon cornmeal, dissolved in 1 tablespoon water

👨🏼 🍳 Lumpia Semarang: Steps to follow for its elaboration

➡️ For filling:

• Step 1:

Heat 1 tablespoon oil in a frying pan, make the egg scrambled. Put aside.

• Step 2:

Heat another 2 tablespoons of oil, saute shallot and garlic until fragrant.

• Step 3:

Add the tender onion and shrimp, stir and cook until shrimp are cooked through.

• Step 4:

Add chicken and bamboo shoots, stir to mix. Add the dried shrimp and scrambled eggs. Mix them well.

• Step 5:

Add soy sauce, pepper and salt. Add some sugar if necessary (to taste).

• Step 6:

Pour in the water, cook until all food is cooked through and leave to cool.

➡️ Preparing spring rolls:

• Step 1:

Place the wrapper in front of you, with a corner at the bottom to make it look like a diamond.

• Step 2:

Place 2 tablespoons of filling on the bottom of the thin trunk-shaped wrapper, avoiding touching the edges.

• Step 3:

Leave the lower centimeters clear. Lift the wrapper over it and put it under the filling.

• Step 4:

Fold the left and right side and roll it to form a tube.

• Step 5:

Fry the spring rolls over medium-high heat until lightly browned. It should only take a minute or two.

• Step 6:

Dry with kitchen paper or place on the tray with towels to drain.

➡️ Make the sauce:

• Step 1:

Boil all the ingredients in the sauce until thick. Remove from heat.

• Step 2:

Sweet and sour sauce (if you prefer): Mix all ingredients and cook until boiling. Add the cornmeal, stir and cook until sauce thickens. Remove from heat.

👉 Serve spring rolls with sauce while hot or if you prefer unstepped spring rolls, you can eat them as it is after 👌 wrapping them.
