Batagor is a popular street food from the city of Bandung in West Java. Today, this dish of meatballs and peanut sauce can easily be found on any island in the country.
Batagor are a kind of meatballs stuffed with fish and/or meat paste. It is traditionally made from minced tenggiri (wahoo) fish, although other types of seafood such as tuna, mackerel and prawns can also be used. The paste is subsequently coated in wonton or tofu skins, fried, and then dipped in peanut sauce, a drizzle of kecap manis, and sometimes spicy sambal sauce.
The word Batagor comes from the abbreviation of Ba for Bakso (dumplings), Ta for Tofu (tofu), Gor for goreng (fried).

• Step 1:
Cut each square of tofu diagonally to form 8 triangles. Make a cut in the base of each tofu triangle and scoop out enough tofu creating a gap.
• Step 2:
Mix the leftover tofu pieces, prawns, egg, ground chicken, green onion, cornstarch, sesame oil, salt, and pepper in a bowl for filling. Then carefully fill the tofu triangles.
• Step 3:
Steam the stuffed tofu triangles for 20 minutes.
• Step 4:
Meanwhile, make the dough. Mix the egg and flour in a bowl. Add enough water to make it a medium consistency.
• Step 5:
Mix water, peanuts, red chili, garlic, vinegar, salt and sugar in a bowl. Stir until the salt and sugar have dissolved and save the sauce for later.
• Step 7:
Heat the oil in a deep fryer. Dip the triangles into the dough and put them in the hot oil. Fry in batches until golden brown and the dough is cooked through, about 5 minutes. Drain on paper towels.
